This dissertation conducts a comparison of French Nouvelle Cuisine and Japanese Kaiseki Cuisine, exploring the similarities and differences of both cuisines and reflecting how cultural values, philosophical aspects, and historical influences have shaped contemporary dining experiences. In the examination of both cuisines, it takes into consideration aspects such as sensory experience, plating, and their underlying philosophical principles to demonstrate the interaction between aesthetics and culture particularly in relation to the culinary arts. French nouvelle cuisine was influenced by the Enlightenment, and this type of Western cuisine highlights a focus on texture and balance in flavor, emphasizing freshness, innovation, and intellectual artistry. Kaiseki cuisine inherited the tradition of the Japanese tea ceremony and is essentially rooted in Zen Buddhism. Some of the core aesthetic concepts in Kaiseki cuisine include seasonality, simplicity, and the aesthetic concept of wabi-sabi, emphasizing how humans should live in harmony with nature. As these two types of cuisines are compared, there will also be a comparison of Immanuel Kant’s aesthetics and how it is related to French nouvelle cuisine, as representative of a Western philosophical view and this will be compared to Japanese aesthetics in general and, in particular, the views on aesthetics of the Japanese philosopher Daisetsu Teitaro Suzuki, as representative of an Eastern philosophical view and its relation to culinary arts.

This dissertation focuses on the novel Rouge by the Hong Kong-based writer Lilian Lee, which is a fantasy novel that proclaims feminism by deploying a love tragedy, describing the social context and atmosphere of Hong Kong in the 1930s and 1980s, and the living and afterlife experiences of the courtesan Fleur. Rouge was first published in 1984 and subsequently adapted into a film in 1988, which won several awards at film festivals. The novel Rouge can be regarded as Lilian Lee’s most representative work and a significant cultural symbol of Hong Kong in the 1990s. Love is a universal human experience that has a significant impact on our lives, relationships, and our understanding of ourselves and the world around us. Consequently, philosophers have long sought to gain insight into its nature, origins and role in human existence, which makes the exploration of love a core focus of philosophical inquiry. This research will examine how the novel Rouge explores the interplay between authentic love and ego love, and will also investigate the causes that led to Fleur’s tragedy.

This thesis explores the nature of holistic consciousness in Hermetic philosophy, drawing on the classical text of The Emerald Tablet and The Corpus Hermeticum attributed to Hermes Trismegistus. Central to this ancient philosophy from Hellenistic Alexandria is the “as above, so below” principle, highlighting the interconnectedness of all things. Hermetic philosophy views harmony as the balance and interconnection of all elements in the universe. Sound, tied to the divine word, is vital for this harmony and understanding of creation and divine wisdom. This thesis focuses on the relationship between human, cosmic, and divine consciousness. Through divinization, humans can align with cosmic consciousness, realizing their divine nature by transcending physical limitations. Furthermore, we will review Hermetic philosophy in light of contemporary challenges, such as materialism which has caused environmental, social and mental health crises. Hermetic philosophy’s holistic approach and emphasis on interconnectedness can counteract social atomization caused by digital technology. Hermetic philosophy having a scientific-rational basis, can be aligned with contemporary ideas like the holographic universe theory. Self-reflection, meditation, nature engagement, and inner dialogue are all proven methods for cultivating holistic consciousness, as advocated in Hermetic philosophy. We can better understand the universe by integrating Hermetic wisdom with science. 這篇論文探討赫爾墨斯哲學中整體意識的性質,參考了赫爾墨斯·特里斯梅吉斯圖斯所屬的古典文本《翡翠石板》和《赫爾墨斯文集》。這一源自希臘化亞歷山大的古老哲學的核心原則是「上如是下」,強調所有事物之間的相互連結。 赫爾墨斯哲學視和諧為宇宙中所有元素的平衡與相互關聯。聲音與神聖之語相連,對於這種和諧及對創造與神聖智慧的理解至關重要。這篇論文專注於人類、宇宙與神聖意識之間的關係。透過神化,人類能夠與宇宙意識對齊,超越身體的限制,實現其神聖本質。 此外,我們將審視赫爾墨斯哲學在當代挑戰下的意義,例如物質主義所導致的環境、社會和心理健康危機。赫爾墨斯哲學的整體方法和對相互連結的強調,可以對抗數位科技所造成的社會原子化現象。 赫爾墨斯哲學具科學理性基礎,能與當代觀念如全息宇宙理論相結合。自我反思、冥想、與自然的互動及內心對話,都是培養整體意識的有效方法,正如赫爾墨斯哲學所提倡的。我們可以通過將赫爾墨斯智慧與科學相結合,更深入地理解宇宙。

Though Cartesian dualism has been criticized for decades, it still prevails as a strongly dominant cultural mindset rooted in people’s minds, especially in the social environments that we experience. Along with it, there is not only a loss of attention to our own bodies but also a loss of the recognition of the experience of inter-subjective reciprocity. Therefore, I hope, through the methodology and virtue of phenomenology, especially from the phenomenological-ontological account of the body/flesh from the modern French philosopher Maurice Merleau-Ponty, to help my readers to overcome convincingly and detach themselves from the traditional Cartesian mindset. I argue that the body is born as a communicative-reciprocal being that sustains a priori connection with all other things in the world, and with the world. The body is a lived body and a transcendental being that cannot be reduced to fit in the present reductionistic mathematical-scientific idealized frameworks. After pointing out the insufficiencies in traditional mathematical scientific and Cartesian accounts of the body in Chapter One, my argument will be unfolded along with reflections on the common experiences in daily life and the textual analyses respectively contributed by Merleau-Ponty’s works The Phenomenology of Perception, especially in Chapter Two, and The Visible and the Invisible, especially in Chapter Three.

This research investigates the philosophical question of whether nostalgia, often viewed as irrational and unproductive, truly hampers the present. While some philosophers consider it an obstacle to progress, this study highlights its positive and hopeful aspects. With a focus on Heidegger’s existentialist philosophy, the link between nostalgia and the concept of “home” as a metaphysical sanctuary is explored. Using a phenomenological approach, this research reveals how nostalgia intertwines with hope, demonstrating that nostalgia can be an act of hope. The openness of Dasein allows humans to experience their presence in the world. Mood reveals one's current state of being, with nostalgia being one such mood. Nostalgia discloses the objects of longing, ultimately rooted in the notion of “home.” At its foundation, this exploration is fundamentally tied to the essence of hope. This leads to a renewed interpretation of nostalgia as a crucial part of growth, highlighting its significance in life. Moreover, the thesis advocates for using nostalgia as an instrument to foster hope, effectively bridging the individual with hope itself.

Buddhism was founded by Shakyamuni, and this religion has appeared in opposition to Brahmanism's caste system since its inception. Shakyamuni emphasized the important concept of “all beings are equal” from the very beginning. Buddhism spread from India to other regions, and was introduced to China through Central Asia. In China, Buddhism merged the two native cultures of Confucianism and Taoism and finally produced the socalled Chinese Buddhism. Buddhism and its value of equality were also developed and extended in China, and finally spread to Japan. After Buddhism was spread to Japan, it developed rapidly due to official support. Different Buddhist sects have established their own temples in Japan, and among them, Zen Buddhism has the greatest influence among all social classes in this country. Later, after years of development, Zen Buddhism penetrated into many aspects of Japanese culture, such as religion, aesthetics, garden design, samurai spirit and tea ceremony. With the spread of Zen Buddhism, the core value of Buddhism which is “Buddhist concept of equality” was also spread to Japan. The tea ceremony is precisely the place where this value of equality can be detected. This dissertation explains the many processes that reflect this value no matter inside or outside the tea room, and argues that the spirit of the tea ceremony is to pursue the value of equality
